Reel in the eel

Wild River's range of American eel products have made their debut at this week's Seafood Expo North America.

Available as raw processed fillets or steaks, smoked, or kabayaki style, Wild River offers a new product to seafood consumers.

Wild-caught American eel is a carefully managed fishery in both the US and Canada. State, provincial and federal governments promote sustainability by imposing a variety of conservation measures on the independent, licensed fishermen who catch eels along the North American coast. These include size limits, fishing seasons, regional closures, gear restrictions and harvest quotas.

Corey MacCallum, operations manager at South Shore Trading Co, spoke very passionately about his product: "We are really excited to be here showcasing this delicious fish - a fish caught in the clean cold waters of the Atlantic ocean is really attractive for consumers."

I had a chance to try some of the different recipes on display, including the particularly delicious eel in black bean sauce.
