Waitrose to stock protected British smoked fish

As an ambassador of British food, Waitrose has supported Grimsby Traditional Smoked Fish on the counter for 16 years. Now this specialist group of traditional smokers has received official recognition for producing the unique and authentic taste of the region’s most prestigious delicacy for the last 150 years.

The expertise and time it takes to fillet and traditionally smoke fish successfully is unique to Grimsby, and the knowledge is often passed down through generations of the same family, from father to son.

Waitrose specialist buyer fish, Jeremy Ryland Langley, said:
