Tea-smoked Scottish salmon is latest Heston hit for Waitrose

Tea-smoked salmon is produced by The Seafood Company based in Livingston, exclusively for Waitrose. The Seafood Company is part of Youngs which has supplied Waitrose for many years now with its range of high quality, ready-prepared Scottish seafood, including hot and cold smoked salmon, pates, terrines and canapés.

The salmon is cured in a mixture of sea salt and sugar and smoked for 10 hours in traditional kilns over a mix of oak chippings and Lapsang Souchong tea.

The taste of this perfumed black tea is distinctive because the leaves are smoked over pinewood fires, giving it a smokey taste which, in turn, imparts a lovely flavour to the salmon. The salmon is then matured for a further three days to develop its complex but delicate flavour and melt-in-the-mouth texture before being sliced, packed and sent to Waitrose stores around the UK.

This is the latest in a range of more than 20 products designed according to recipes from Heston Blumenthal.
