Hebridean Baker nets national publicity for Loch Duart

Hebrides author and cook Coinneach MacLeod has showcased Scottish salmon in an appearance on ITV’s This Morning programme.

MacLeod, who found fame as The Hebridean Baker on social media and in subsequent cookbooks, prepared salmon Wellington with fish from Sutherland and Hebrides producer Loch Duart on St Andrew’s day last week.

The cook, who grew up on Lewis, has a creative collaboration with Loch Duart and devised two bespoke Loch Duart Salmon recipes for his new book, The Hebridean Baker: At Home.

Christmas alternative

Presenters Alison Hammond and Craig Doyle watched MacLeod make the pastry-wrapped salmon, which he said “would make a perfect Christmas day alternative” and was “a bit of a showstopper for the table”.

They then tasted the dish, with Hammond, who had explained that “I’m not really a fish person”, saying “that is lovely”.

MacLeod has a large following on the TikTok social media platform. He first used TikTok to post videos of him making traditional Hebridean recipe for his friends to enjoy and had no idea that they would end up being so widely watched.

He was Scotland’s best-selling cookbook author in 2021 and 2022 and represented the country in the World Porridge Making Championships 2021 where he took second place.
