Untapped potential of native oysters

Having developed what is known as the Ortac system, marine biologist and oyster expert Tony Legg now produces thousands of tonnes of native oysters near Green Island every year.

Native oysters used to be common in North Western Europe but overfishing in the 19th Century led to their decline.

He has now been asked to work with Irish, Welsh and Scottish shellfish farmers to create schemes like this and Legg believes the industry could be as big as the Jersey Royal potato industry, according to the BBC.
