The company’s skin-off deboned kingfish portions, presented in modified atmosphere packaging (MAP), are being sold by Albert Heijn, the country’s largest retailer.

As part of a new focus on retail, The Kingfish Company is offering a suite of retail ready products including skinless, boneless, fixed weight individually vacuum-packed and MAP portions, both fresh and sashimi grade frozen.

A full line of loin/belly/tail fixed weight retail ready portions is now available, with additional value-added retail ready products in advanced development, the company said in a press release.

Expanding production

The Kingfish Company grows 1,250 tonnes of yellowtail kingfish a year at its recirculating aquaculture system facility in Zeeland and is expanding production to reach 3,000 tonnes by the second half of next year.

In the United States, permitting for the company’s 6,000-8,000 tonne facility is progressing as planned, with production start scheduled for the second half of 2023.

Modified atmosphere packaging like that used in thew new product involves replacing the air in a pack of fish with a different mixture of gases, typically some combination of carbon dioxide, nitrogen and oxygen.

Although more expensive that vacuum packaging, MAP can offer extended shelf life and, since the transparent packaging is not in close contact with the contents, the buyer can clearly see the product.
