British sushi wows judges

The World Sushi Skills Institute (WSSI) told Fish Farming Expert that they were very impressed by the level of cooking skills in the UK, following the inaugural British sushi championship.

 

The competition, held in partnership with the WSSI and The Norwegian Seafood Council (NSC), featuring dishes made with farmed Norwegian salmon. NSC representative Jack-Robert Møller, told Fish Farming Expert: “The quality in the production of Norwegian salmon gives a fantastic product for raw consumption.”

 

The event was judged by an elite panel including Michael Booth, Hideki Maeda, Jack-Robert Møller, Hirotoshi Ogawa and Kazuo Mizuno.

 

Yesterday’s competition consisted of 9 of the UK’s top sushi chefs, from restaurants such as Maze Grill Park Walk, Sake No Hana and Sushi Samba, battling it out in two rounds; the Edo Mae and the Creative Sushi.

 

On winning, Xia Jia Tian said: “It has been the most incredible experience, I am so honoured to have won this competition and am really looking forward to the final in Tokyo”.

 

Hirotoshi Ogawa explained why Xia Jia Tian was the top competitor, saying: “Today we have witnessed a high quality of competitors, however Xia Jia stood out as an all rounded fantastic sushi chef that impressed all judges”.
